Launched in 1992 as part of Jim Beams small batch bourbon collection, Knob Creek was created to restore the pre-prohibition style of bourbon. Named after the creek that ran through Abraham Lincolns childhood home in Kentucky, it represents a return to the traditions of full-flavored bourbon making, with an unwavering commitment to age statement and proof.
Production Process
Crafted using a mash bill of approximately 75% corn, 13% rye, and 12% malted barley. The bourbon is aged for a full 9 years in newly charred American oak barrels, positioned in the prime locations of the rackhouse where temperature fluctuations optimize the aging process. Each batch is carefully monitored throughout maturation.
Tasting Notes
Rich amber color leads to intense aromas of toasted nuts, maple sugar, and vanilla. The palate presents robust flavors of caramel, oak, and dark fruits, balanced with notes of leather and tobacco. The high proof (100) delivers a full-bodied experience with a long, warm finish featuring hints of spice, brown sugar, and charred oak.
Aging Characteristics
The extended aging process in heavily charred barrels results in significant wood interaction, creating deep complexity and character. The relatively high rye content in the mash bill provides a spicy backbone that complements the sweet corn base.
