Cocchi Dopo Teatro

History

Created by Giulio Cocchi, who founded his company in 1891 in Asti, Piedmont. 'Dopo Teatro' (meaning 'after theater') was designed as a vermouth amaro specifically for the vibrant theater culture of Turin in the early 20th century. It was traditionally enjoyed by theater-goers after performances, hence its name. The recipe combines Cocchi's expertise in vermouth production with the Italian tradition of amari.

Manufacturing Method

Produced by blending Cocchi's Barolo Chinato (a wine-based aperitif) with additional bitter herbs and spices. The base wine is fortified and then infused with cinchona bark, rhubarb root, citrus peels, and other botanical ingredients. After infusion, the liquid undergoes a period of refinement before being bottled at 16% ABV.

Produced in Asti, Piedmont, Italy. The region's rich tradition of vermouth and amaro production significantly influences the product's style. Many of the botanical ingredients are sourced from the surrounding Alpine regions.

Taste Profile

Combines characteristics of both vermouth and amaro. Opens with rich wine notes complemented by dark chocolate and cherry. The mid-palate reveals complex bitter herbs, citrus, and spices. The finish features distinctive notes of chinotto, rhubarb, and subtle vanilla. The overall profile is less intensely bitter than traditional amari, with a pleasant sweetness balanced by herbal complexity.
