History

R.D. (Recently Disgorged) was created by Madame Bollinger in 1967, revolutionizing the concept of late-disgorged champagne. The 2007 vintage continues this legacy, representing a challenging but successful year that produced wines of remarkable precision and longevity.

Manufacturing Method

The 2007 R.D. is aged on lees for an exceptional period (minimum 12 years) before disgorgement. Vinification occurs primarily in small oak barrels, with first fermentation in oak followed by extended lees aging in bottle. The dosage is minimal (3g/L), qualifying it as Extra Brut. Each bottle is disgorged just months before release.

Origin

Produced in Aÿ, France, using grapes from 14 different crus, including 91% Grand Cru and 9% Premier Cru vineyards. The blend consists of wines primarily from Bollinger's own vineyards, with a focus on historically significant plots in the Montagne de Reims and Vallée de la Marne.

Taste Profile

Displays intense complexity with aromas of honey, dried fruits, and toasted nuts. The palate reveals layers of candied citrus, baked apple, exotic spices, and truffle, with a pronounced mineral character. The extended lees aging provides exceptional texture and depth, while maintaining remarkable freshness. The finish is extraordinarily long with notes of walnut and dried fruit.

Technical Details

The blend is 70% Pinot Noir and 30% Chardonnay, sourced exclusively from Grand and Premier Cru vineyards. The 2007 vintage was characterized by early flowering and a relatively cool summer, resulting in wines with excellent acidity and aging potential.
